Kookoo-Yeh Sabzi
Description

A Persian herb omelette, eaten for breakfast or as a side dish.

2-4

1 bunch parsley, dill & coriander, chopped
1 bunch shallots, chopped
¼ iceberg lettuce, shredded
oil
4 large eggs
1 teaspoon baking soda
salt & black pepper
1 tablespoon plain flour
1-2 tablespoons Herbie’s Spices Barberry Whole
2 tablespoons crushed walnuts

Methods/steps
  1. Fry herbs, shallots and lettuce in oil until wilted, then cool.
  2. Beat eggs well, then add baking soda, salt, pepper, flour, barberry and walnuts.  Add vegetables and mix well.
  3. Heat more oil in a non-stick pan and pour in the mix, flattening the surface with the back of a spoon, and place a lid on.
  4. Reduce heat and fry for about 10 minutes, until Kookoo base is cooked, then cut into half or wedges and flip pieces over and fry for a further 10 minutes. 
  5. Serve warm or cold.
