Classic Tartare Sauce
Description It's a sad day when we all become so used to commercially-prepared tartare that we begin to mistake it for the real thing. Go on, make the effort and make your own!

- Make a basic mayonnaise by whisking together the first 5 ingredients. Whisking constantly, add 100mL olive oil, 15ml at a time, incorporating each addition before adding the next. Add another 100mL, in a slow steady stream, while still whisking.
- For each 3 tablespoons mayonnaise, add 3 teaspoons Herbie’s Spices Salted Capers, rinsed and dried and chopped, and 3 teaspoons chopped cornichons, and 1 teaspoon finely chopped parsley.
This will keep in the fridge for up to a week.
