This recipe is one of Herbie’s favourites and was created by his mother, Rosemary Hemphill.
Here's a cake that is simple enough for the kids to make. To make an extra crunchy topping, mix a tablespoon of melted butter and 2 teaspoons each of caster sugar and mixed spice, and brush over the top of the cake just as it finishes cooking. Return to the oven for another 5 minutes.
This shortbread is very more-ish, so be careful! This is an easy recipe for children and beginners.

Gingerbread is very different to the mixture used to make gingerbread men. This is a delicious, dark cake that compliments a cup of tea to perfection. Otherwise, serve it straight from the oven with a dollop of clotted cream.
This recipe is not to be approached lightly when you're in a hurry. The poppy seeds need to be ground, either in a mill or with a pestle and mortar, until they form a slightly textured paste. But it's a delicious, very sweet, cake, well worth the effort.

Nutmeg cake has been around for many years, sometimes called Armenian or Indonesian nutmeg cake. The nutmeg may be from Indonesia, but the cake is of European origin. The crunchy base makes it different from most cakes.

When your occasion is too special for a box of crackers from the supermarket, whip up a batch of these! The most efficient shapes to cut are diamond shapes formed by making straight line cuts right across the rolled pastry. These biscuits will keep well for two weeks in an airtight container.
Make these into very dainty buttons by rolling only very small portions of dough before flattening with a fork. The biscuits can be sandwiched together using butter icing, but we perfer them just as the are. These are just as delicious when you substitute Fragrant Sweet Spices for Mixed Spice.

Although this is a 3-step recipe, and the result is good enough to grace a dinner party, it is so simple that it can easily be made by a child over about 8 years of age. A novel and very rewarding pastime for a wet afternoon!
