Bushman's Steak Sandwich
Description This is a steak sandwich tour de force, with a great cut of steak matched with the best flavours.  It's a meal in a bun!

4 eye fillet or scotch fillet steaks
2 tablespoons Herbie’s Spices Bushman’s Pepper Pot
¼ teaspoon Dijon mustard
zest and juice of 1 large lime
200mL mayonnaise
50g rocket or baby spinach leaves
2 long or 4 short ciabatta or similar bread
16 slow-roasted tomato halves

Methods/steps
  1. Coat steaks in Bushman’s Pepper Pot and heat a griddle or pan.
  2. Mix mustard with lime and mayonnaise.
  3. Wash and pick stems of salad leaves.
  4. Halve and grill ciabatta loaves.
  5. Cook steaks for 2½ minutes each side for medium rare, allow to rest for 3 minutes.
  6. Spread mayonnaise on bread, top with tomato halves, steak and rocket and close sandwiches.
