4 eye fillet or scotch fillet steaks
2 tablespoons Herbie’s Spices Bushman’s Pepper Pot
zest and juice of 1 large lime
50g rocket or baby spinach leaves
2 long or 4 short ciabatta or similar bread
16 slow-roasted tomato halves
Coat steaks in Bushman’s Pepper Pot and heat a griddle or pan.
Mix mustard with lime and mayonnaise.
Wash and pick stems of salad leaves.
Halve and grill ciabatta loaves.
Cook steaks for 2½ minutes each side for medium rare, allow to rest for 3 minutes.
Spread mayonnaise on bread, top with tomato halves, steak and rocket and close sandwiches.
