Bronzed Aussie Kangaroo
Description It's only natural that Australia's own lean red meat should marry perfectly with our all-Australian Native Barbecue Spice mix. This dish has an elegant simplicity that makes it a great dinner option for overseas guests as well as the family.

Sprinkle half a tablespoon of spice mix over the meat, on all sides, pressing on firmly. The moisture in the meat will make the spices stick.
Heat a tablespoon of olive oil in a pan and cook the kangaroo fillets until sealed on each side. Reduce heat, cover, and cook 3-4 minutes until rare in the centre.
Remove to a warm plate (it will continue cooking until medium-rare in the middle) and deglaze the pan with one tablespoon water or chicken stock.
Add salt to taste, stir until smooth and well coloured.
Slice kangaroo fillets diagonally into 1cm thick slices, serve over creamy potato mash and spoon pan juices over.
Another use for Native BBQ Spice: sprinkle over lamb or beef steaks before cooking, or coat potato wedges and vegetables before roasting.
